  • 4 ripe plums halved and pitted
  • ½ cup freshly squeezed orange juice
  • cup of brown sugar firmly packed

  • teaspoon freshly grated nutmeg
  • teaspoon ground cardamom
  • ¼ teaspoon pure vanilla extract

Step 1: Preheat the Oven

Step 2: Prepare the Plums

  • Next, wash the plums under cool running water. Cut them in half and remove the pits. An easy way to do this is to twist each half gently. You should have eight juicy plum halves ready for roasting.

  • In a mixing bowl, combine the brown sugar, cinnamon, nutmeg, cardamom, sea salt, vanilla extract, and orange juice. Stir until the sugar has dissolved somewhat into the juice.

Step 4: Arrange in a Baking Dish

  • Take an oven-safe baking dish. Arrange the plum halves cut side up. Pour the spice mixture over them, ensuring that each half is coated. This step is crucial. It allows the flavors to meld during roasting.

Step 5: Roast

  • Pop the baking dish in the oven. Roast the plums for about 30 minutes or until they’re tender and starting to caramelize. The aroma that fills the kitchen during baking is heavenly. Keep an eye on them near the end to prevent overcooking.
