Instructions
 

  • In a large pot, heat the extra virgin olive oil over medium heat. Add the finely chopped onion and sauté until it's soft, about 5 minutes. You’ll want it to be translucent, providing a fragrant backdrop to your soup.
  • Next, stir in the chopped broccoli and grated carrot. Cook for about 2-3 minutes, allowing the vegetables to soften slightly while absorbing the flavor from the onion.
  • Pour in the chicken stock gradually. With a little mixing, scrape the pot’s bottom to release those flavorful bits. Bring to a boil.
  • Add fresh lemon juice, cayenne pepper sauce, nutmeg, and garlic powder to the boiling mixture. Mix well and then reduce to a simmer.
  • Slowly add the heavy whipping cream while stirring constantly. Let it simmer for an additional 10 minutes. This allows the flavors to meld.
  • Stir in the shredded cheddar cheese, mixing until it melts smoothly into the soup. You’re nearly there, folks!
  • Give it a taste. Need more seasoning? Adjust as necessary. If you want to amp up the creaminess, adding a touch more cream won’t hurt.
