Equipment

  • grill

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 1/2 pounds jumbo shrimp 16/20 count, peeled and deveined
  • 2 tablespoons freshly squeezed lemon juice
  • 3 garlic cloves finely minced
  • 2 tablespoons fresh parsley finely chopped
  • 1 teaspoon dried oregano lightly crushed
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed red pepper flakes optional, for a bit of heat
  • 1 teaspoon honey optional, for a touch of sweetness to balance flavors
  • Lemon wedges for garnish

Instructions

  • In a medium-sized bowl, combine the olive oil, lemon juice, minced garlic, parsley, oregano, salt, paprika, pepper, and red pepper flakes if you like it spicy. Mix well until blended. This marinade will infuse the shrimp with a burst of flavor.
  • Add the cleaned shrimp to the marinade. Ensure each shrimp is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes. If you have time to spare, a 30-minute soak can further enhance the flavors.
  • While the shrimp are soaking in the tasty marinade, fire up your grill. If using a charcoal grill, allow it to reach a consistent medium-high heat. A gas grill will take just a few minutes to come to temperature. Ensure the grill grates are well greased to prevent sticking.
  • Remove the shrimp from the marinade, allowing excess to drip off. Skewer the shrimp if you'd like for easier handling. Place them on the preheated grill. Grill each side for about 2-3 minutes or until the shrimp turn pink and opaque. Avoid overcooking, as shrimp can become tough.
  • Once cooked, remove the shrimp from the grill and arrange them on a serving platter. Garnish with lemon wedges and perhaps a sprig of parsley for a pop of color. Get ready for compliments from your dinner guests!

Notes

  • Use Fresh Shrimp: If available, always opt for fresh shrimp. A good quality product makes a big difference in flavor and texture.
  • Don’t Overcrowd: Cook shrimp in batches if necessary. Overcrowding can lead to uneven cooking. You want that glorious char!
  • Watch Your Time: Shrimp cooks quickly, so keep an eye on them. Timing is key to maintaining that perfect tenderness.
  • Go Wild with Seasonings: Feel free to experiment with different herbs and spices. Dill, coriander, and even lime juice can give a fresh twist.
  • Serve Immediately: Grilled shrimp are best enjoyed hot off the grill. The flavor profile is freshest right after cooking.
