  • 3 cups 750 grams of fresh egg noodles or lo mein noodles
  • 1/2 pound 250 grams of boneless, skinless chicken breast or thigh, thinly sliced
  • 3 tablespoons 45 ml of vegetable oil (such as canola or peanut)
  • 2 teaspoons 10 grams of finely chopped garlic
  • 1 1/2 tablespoons 11 grams of julienned ginger
  • 1 tablespoon of cornstarch
  • 1/4 cup 60 ml of homemade chicken broth
  • 1 tablespoon 15 ml of rice vinegar
  • 1 teaspoon of toasted sesame oil
  • 1 tablespoon 15 ml of light soy sauce
  • 3 tablespoons 45 ml of oyster sauce
  • 1/4 pound 125 grams of baby bok choy, bottoms trimmed
  • 3 scallions chopped into 1 1/2-inch (4-cm) p

Instructions
 

  • Start by collecting all your ingredients. Thinly slice the chicken and chop your vegetables, including garlic, ginger, bok choy, and scallions. This will help the cooking process move smoothly.
  • Bring a large pot of salted water to boil. Add your noodles, cooking them according to package instructions until they are al dente. Once done, drain and rinse them under cold water to stop the cooking process. Set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken slices and cook until golden brown, about 3-4 minutes. Remove the chicken and set aside, leaving any drippings in the pan.
  • In the same skillet, toss in the garlic and ginger. Cook for about 30 seconds until fragrant. This aroma will whip your kitchen into a frenzy.
  • Return the chicken to the skillet. Mix in your cooked noodles and the bok choy. Pour in the chicken broth, rice vinegar, sesame oil, soy sauce, oyster sauce, and sugar. Stir-fry for about 3-4 minutes until the bok choy is wilted and everything is well combined.
  • Add in the scallions and stir for an additional minute. Check the seasoning and adjust if necessary.
  • Plate your beautiful lo mein, and don’t be shy about garnishing with extra scallions if you feel fancy.

Notes

  • Pre-Cook Your Chicken: To save time, marinate your chicken a day in advance. It enhances the flavor and expedites cooking.
  • Use a Hot Pan: A hot skillet or wok is essential for that signature stir-fry taste. It helps achieve a nice char on your ingredients.
